Saint Patrick’s Day Cookies

I used the royal icing transfer method to create the four-leaf clovers.
Once the royal icing transfers were completely dry (I let mine dry overnight), I painted them with Roxy & Rich Emerald Green luster dust (available in my Amazon Store). The bead border is also painted with luster dust – Crystal Colors Antique Gold is my favorite (also available in the Amazon Store). Saint Patrick's Day Cookies
These cookies for Saint Patrick's Day feature shimmering shamrocks and brightly colored rainbow chevron, complete with a golden bead border. The supplies are available in my Amazon Store unless otherwise noted.
Materials
- Chocolate Cookie Dough
- Ann Clark 4.25" Square Plaque Cookie Cutter
- Acrylic board or baking sheet for royal icing transfers
- Parchment paper
- Tape
- Four-leaf clover template (attached to the post)
- Chevron template (attached to the post)
- Edible ink marker
- Edible green luster dust (I used Roxy and Rich Emerald Green)
- Flood consistency royal icing in red, orange, yellow, bright green, Kelly green, blue, and purple (I used Wilton Color Right to make all of these colors)
- Stiff consistency icing in golden brown
- Scribe tool
- Decorating bags
- Couplers
- Bag ties
- Decorating tips 1, 2, and 3
- Round brush (I used the one from the Wilton 5 piece set)
- Gold luster dust (I used Crystal Colors Antique Gold)
- Alcohol or any flavor extract for mixing with the luster dust (I use Devil's Spring 151 proof vodka)
- Paint palette or small dishes for mixing luster dust and alcohol
Instructions
- Wrap an acrylic board or the underside of a baking sheet with parchment or wax paper. Slide the template under the paper.
- Pipe two leaves of the clover with Kelly green flood consistency royal icing and a decorating tip 2. Use a scribe tool to help shape the icing. Allow the icing to dry for at least 30 minutes.
- Pipe the remaining leaves. Use a scribe tool to help shape the icing. Allow the icing to dry completely (overnight is best).
- Mix green luster dust with alcohol or any flavor extract, such as vanilla, lemon, or almond (Alcohol is used for painting on royal icing because it evaporates very quickly, which means that the liquid won’t dissolve the icing as you are applying the paint. The stronger the alcohol, the better!).
- Paint the clovers with the luster dust mixture.
- Carefully remove the clovers from the paper.
- Cut plaque cookies from a chilled sheet of cookie dough. Bake them according to the recipe and allow them to cool completely before decorating - about 30 minutes.
- Use an edible ink marker to trace the chevron template onto the cookie.
- Ice the cookie with flood consistency royal icing in red, orange, yellow, bright green, blue, and purple.
- While the icing is still wet, apply the clover (royal icing transfer) to the cookie. Allow the icing to dry for at least an hour.
- Pipe a stem with the Kelly green icing and use the scribe tool to help shape the icing.
- Pipe a border with golden brown stiff consistency royal icing and a decorating tip 3. Allow the icing to dry for about 30 minutes.
- Paint the stem with the green luster dust mixture.
- Mix gold luster dust with alcohol or any flavor extract.
- Paint the border with the gold luster dust mixture. Enjoy the cookies right away or allow the rainbow icing to dry overnight before packaging them.
