How To Decorate and Assemble a Gingerbread House

A gingerbread house decorated with royal icing. The house features a pastel blue and purple filigree design on the front and sides. The roof is decorated with a scalloped pattern and covered in sparkling sugar. The windows and doors of the house are sprinkled with sparkling sugar. The house is sitting on a white base and there is a pink bokeh background with twinkling lights.

Some of my cookie friends and I decided to make our own version of a gingerbread house using the same kit! My version includes filigree, of course! This video tutorial will show you how to decorate and assemble a gingerbread house with royal icing.

You can see the other house designs from Haniela's, LilaLoa, and The Painted Pastry on Instagram. Each one of our designs is so different. I think it's really amazing that we all used the same exact supplies to make such unique houses!

Decorating and assembling this gingerbread house is a 2 or 3 day process, so make sure to give yourself plenty of time.

Here's what you'll need:

  • Gingerbread House Pre-Baked Panels (or use my gingerbread recipe and templates in my Cookie Art Club)
  • Royal Icing
  • Blue gel color
  • Yellow gel color
  • Red gel color
  • Black gel color
  • Opal sanding sugar
  • White non-pareils
  • Gold and Silver sixlets
  • Piping bags
  • Metal scribe tool

One of the most important things to keep in mind when assembling a gingerbread house is having the right the royal icing consistency. It should be soft enough that it sticks to the cookie (very stiff icing will just fall right off), but not so soft that it drips off of it. Following the instructions on the royal icing mix that comes in the kit will give you the perfect not-too-stiff-not-too-soft icing consistency for assembling the gingerbread house.

Watch the video tutorial below to see how to decorate and assemble a gingerbread house using the kit.
