Rainbow Scratch Art T-shirt Cookies

I was inspired to make these rainbow scratch art t-shirt cookies when I saw my friend Haniela’s version on a buttercream cake a couple of years ago.

The cookies are decorated with royal icing and modeling chocolate (I prefer the taste over fondant).

I piped a different rainbow pattern on each cookie and used a variety of tools to create the scratch art in the modeling chocolate.

Here’s what you’ll need to make these Rainbow Scratch Art T-shirt Cookies

  • Lime Coconut Cut-Out Cookie Recipe or Orange Vanilla Cardamom Cookie Recipe
  • Flood consistency royal icing
  • T-shirt cookie cutter
  • Mini cookie cutters (optional)
  • Scribe tool
  • Two-in-one tool
  • 12″ tipless decorating bags
  • Modeling Chocolate or Fondant (I used Fondarific brand but it seems to be out of stock on Amazon. I linked to Satin Ice, which is another great brand)
  • Chefmaster food coloring in Coal Black, Super Red, Sunset Orange, Royal Blue, Lemon Yellow, Leaf Green, and Violet
  • Rolling pin
  • Fondant rolling pin

Instructions

1) Cut the cookies from a chilled sheet of cookie dough using the t-shirt cookie cutter. Bake the cookies according to the instructions and allow them to cool completely.

2) Split the flood consistency royal icing into 6 containers and color it red, orange, yellow, green, blue, and purple.

3) Fill tipless decorating bags with the icing.

4) Cut a small hole in the tip of the decorating bags. Outline a t-shirt cookie with any color. I’m starting with red.

5) Pipe a rainbow using any design you like. I made a different pattern for each cookie. You can drag the scribe tool through the icing to create a new design.

6) Mix the black food coloring into the modeling chocolate. Roll the modeling chocolate to about ⅛” thick.

7) Cut a t-shirt out of the modeling chocolate.

8) Roll the modeling chocolate again as thin as you can get it without tearing. Cut the t-shirt again with the cookie cutter.

9) Place the modeling chocolate onto the cookie and smooth it out.

10) Use a scribe tool or a two-in-one tool to scratch a design into the modeling chocolate.

11) You can use the handle of a brush or other tools to create your design.
