How To Make Embossed Cookies
I made these embossed cookies with my gingerbread cookie dough and an engraved rolling pin that my mom gave to me last Christmas. Here’s how to make them!

2. Cut and bake the cookies
Cut the cookies with a star cookie cutter. If the dough is very soft at this point, you can put it into the fridge until it’s firm. I always try to keep the dough in the cutter when transferring it to the baking sheet so that the cookies keep their shape.
Bake the cookies according to the recipe (my gingerbread cookie recipe is available in my book, Cookie Canvas, and in my Cookie Art Club)

3. Ice the cookies
After baking the cookies, apply a little bit of royal icing. The consistency should be very runny (thinner than my usual flood consistency).

4. Brush the icing
Spread the icing all over the cookie with a decorator brush. The thin consistency allows the icing to settle nicely into all of the little spaces in the design.
