
Instead of celebrating Valentine's Day this year with the usual box of chocolates, I created a set of cookies inspired by the Galentine's Day episode of Park's and Rec. These cookies are decorated with royal icing and feature a portrait of Leslie Knope, a plate of waffles with a dollop of whipped cream, and plaques with some of my favorite quotes from the show 🙂

Here's what you'll need to make these Galentine's Day Cookies

Equipment
- Stand mixer with paddle attachment
- Rubber spatula
- 12 small bowls for mixing icing colors
- Small spatula or spoon for mixing icing colors and filling decorating bags
- Rolling pin (preferably with ¼” guides)
- Rolling mat or parchment paper
- Parchment lined baking sheets
- Scissors
Tools
- 4” Plaque Cookie Cutter
- 4-¼” round cookie cutter
- 2-¾” round cookie cutter
- Template
- 12” decorating bags
- Wilton decorating tips 3 and 21
- Wilton couplers
- Wilton bag ties
- Food coloring (Chefmaster)
- Lemon Yellow
- Violet
- Rose Pink
- Super Red
- Buckeye Brown
- Edible ink markers
- Scribe tool
- Wilton decorator brush
- Vodka or grain alcohol to mix with the brown food coloring
- Paint palette or small dish to mix the vodka and brown food coloring
