I recently taught a CIA Foodies class at my alma mater, The Culinary Institute of America. It's been over 12 years since I graduated and it's surreal that I am now going back there to to teach cookie decorating techniques! This fondant cameo cookie is one of the designs I demonstrated during the class.

I don't use fondant often, but it works so well for making small decorations like this. I've seen some very talented decorators pipe cameos by hand with royal icing, but that takes some serious dedication! Making your own food-safe molds is pretty easy to do (I use this mold making material). If you don't already have a collection of cameos or costume jewelry, visit your local antique or vintage shops to find some pieces that inspire you. You can also find ready-made molds on Etsy.

Of course a cameo cookie isn't complete without some gold embellishments. I used Crystal Colors Antique Gold on this laurel leaf-style border.
