The toppings on these bagels and lox cookies are made using the royal icing transfer technique. For this method, the icing decorations are piped on a piece of wax paper, allowed to dry, then peeled off and placed onto the cookie. This allows you to make your decorations weeks in advance and store them until you're ready to use them!
Learn more about the royal icing transfer technique in this tutorial.

This tutorial will also teach you how to make a beautiful wet-on-wet royal icing rose design that is shown on these Delft pottery inspired cookies.
