Mosaic Cookies
Since I’ll be teaching cookie decorating classes in different places around the world over the next few months, I thought it would be neat to create a cookie based on each city that I visit. These mosaic cookies were inspired by the beauty of Barcelona! I was there teaching classes at El Mon Dolc De Claudia a couple of weeks ago.
While these cookies were pretty simple to make, it was not a quick process! It took me nearly an hour to complete each one. I worked on them a little bit at a time throughout the week between other projects. Probably not the most practical way to decorate a cookie, but I just love how they turned out!

Here’s what you’ll need for this project:
- Roll out cookie recipe (use your favorite or get mine in the tutorial shop)
- Ruler and paring knife to cut 2 x 2″ cookies
- Wax paper
- Small offset spatula
- Flood consistency royal icing
- Medium consistency royal icing
- Edible Adhesive (you can use piping gel instead, but the edible adhesive dries much faster it’s less sticky than piping gel)
- 12″ piping bags
- Decorating tip 1
- Scribe tool
- Brush
Colors: The Wilton Color Right color system was used to create all of the icing colors in this set of cookies.
