Eyelet Lace Gingerbread Snowflake Cookies

I was inspired to make these eyelet lace gingerbread snowflake cookies during a class I was teaching a couple of weeks ago. I had some gingerbread dough leftover from another project and I thought the technique would look really beautiful on snowflake cookies.

I think it’s safe to say, I was right! 🙂

How To Decorate Eyelet Lace Gingerbread Snowflake Cookies

  1. Sift the royal icing mix and make the icing according to the instructions on the package. The icing should hold a stiff peak. 
  2. Remove ⅓ of the icing and thin it to soft peak (medium consistency) by adding 1 teaspoon of water at a time. 
  3. Thin the rest of the icing to flood consistency by adding 1 tablespoon of water at a time. Check the consistency of the icing by taking a spoonful of icing out of the bowl and dropping it back in. It should take 15-20 seconds to be completely smooth. 
  4. Fit a decorating bag with a tip 1 and fill it with the medium consistency icing.
  5. Fill a tipless decorating bag with the flood consistency icing. 
  6. Outline a snowflake cookie with medium consistency royal icing and a decorating tip 1.
  7. Pipe an eyelet lace pattern.
  8. Allow the icing to dry for about 15 minutes.
  9. Cut a small opening in the tipless bag. Fill in the space around the eyelet pattern with flood consistency royal icing.
  10. Use a scribe tool to help shape and smooth the icing. Allow the icing to dry completely.
  11. Outline the eyelet lace pattern again with medium consistency royal icing and a decorating tip 1.
  12. Use the medium consistency royal icing to add details.
  13. Pipe a border with the medium consistency icing.
