Gingerbread Cookies

I posted this recipe for gingerbread cookies earlier this month when I made these gingerbread cookie ornaments. You can see a video on how to make the recipe in this video tutorial.

Gingerbread-cookies

Gingerbread cookie recipe (makes about 40 3″ cookies)

1 cup light brown sugar
1 cup (2 sticks) unsalted butter, softened
1 cup molasses
2 large eggs
5 cups unbleached all purpose flour
1 teaspoon baking powder
1 teaspoon salt
2 teaspoons ginger
1 teaspoon cinnamon
1/2 teaspoon allspice
1/2 teaspoon cloves
1/2 teaspoon nutmeg
Directions:
  • Cream the butter and sugar on medium speed until light and fluffy
  • Add the molasses and mix until combined
  • Add the eggs, one at a time, scraping the bowl in between each egg
  • Sift flour, salt and spices and add to the butter mixture
  • Mix on low speed until dough forms
  • Split dough into two pieces, wrap in plastic and chill for one hour
  • Roll dough into 1/4″ sheets, chill for 30 minutes
  • Cut out shapes
  • Freeze for 15 minutes
  • Bake at 350F for 10-12 minutes, rotate tray after 6 minutes

  1. I would like to try this recipe however i do not know how much is 1 cup of butter. In my country we use grams and mililiters so 1 cup is a quite unclear.
    Can I replace molasses with something else?

    • Hi Izabella, I’m from oz and have a conversion book…..1 cup of butter is 227gm. And I use golden syrup instead of molasses. I hope this helps.
