Gingerbread Cookie Recipe for Christmas Ornaments

I love making edible Christmas ornaments! I’ve already made one set this year, but I couldn’t stop there, so I made these gingerbread cookie ornaments, too. Watch the video below for instructions on how to make these edible ornaments and then scroll down for the full gingerbread cookie recipe.

Gingerbread cookie recipe:
1 cup light brown sugar
1 cup (2 sticks) unsalted butter, softened
1 cup molasses
2 large eggs
5 cups unbleached all purpose flour
1 teaspoon baking powder
1 teaspoon salt
2 teaspoons ginger
1 teaspoon cinnamon
1/2 teaspoon allspice
1/2 teaspoon cloves
1/2 teaspoon nutmeg
Sparkling sugar
  • Cream the butter and sugar on medium speed until light and fluffy
  • Add the molasses and mix until combined
  • Add the eggs, one at a time, scraping the bowl in between each egg
  • Sift flour, salt and spices, add to butter mixture
  • Mix on low speed until dough forms
  • Split dough into two pieces, wrap in plastic and chill for one hour
  • Roll dough into 1/4″ sheets, chill for 30 minutes
  • Cut out shapes
  • Use round decorating tip 8 to cut holes for ribbon
  • Brush cookies with water, sprinkle with sparkling sugar
  • Freeze for 15 minutes
  • Bake at 350F for 10-12 minutes, rotate tray after 6 minutes
  • Allow to cool completely before tying on the ribbon

  1. Amber can you tell me the texture of this cookie if made as a recipe to consume-not to hang on a tree? Is it crisp outside and soft inside? I figure exposure to air – like hanging on a tree- will change a soft cookie hard and a hard cookie soft?
    So what is this cookie’s consistency? Thanks in advance for your reply. I intend to make them for Easter-yes, i know, a bit ironic 🙂

  2. Hi! I’m thinking about making these in advance (1.5 weeks)…do you recommend freezing them or will they be good in an airtight container for 1.5 weeks before frosting them? Thank you!
